Dark Mint Brookies

I am one of those bakers who bakes when their heart (or stomach) implores them to.  But yet, when I have to bake for a party or a dinner with a tight deadline, sometimes I find it hard to get going in the kitchen.  I am one of those lazy bakers only motivated by the desire to give to loved ones or my own cravings!

I love brownies but my son detests them so I tend to bake them in cookie form most of the time.  I love doing this as the bake time is a whole lot less and they are delicious to eat!

My son’s friend Russell is unwell so my heart was telling me to bake him brookies!  Hopefully it bought him some joy today.  He is such a sweet boy and deserves something sweet!

And just a warning, there will be plenty of more different flavours of brookies coming up, I think I am addicted!


You will need:

  • 450g of dark chocolate chopped or just broken into small pieces
  • 150g of butter
  • 1 1/2 cups of plain flour
  • 4 eggs
  • 1 1/2 cup brown sugar
  • extra chopped chocolate to sprinkle on top

Preheat the oven to 150 degrees celcius.

Place the chocolate and butter in a microwable bowl and melt in the microwave for about 2 minutes until melted.  Use a whisk and slowly whisk until combined and glossy.  Cool slightly.

In a larger bowl, place the eggs, flour and sugar together.  Mix well with a wooden spoon.  Add the chocolate mixture and mix until well combined and smooth.


On a lined baking tray, use an ice cream scooper to scoop the brownie cookie mixture onto the tray.  Each tray should hold maximum 6 cookies and make sure they are well spaced as they will spread (a lot)!  This recipe batch will give you three trays so 18 brookies!

Then sprinkle some chopped chocolate on top.  I used some mint dark chocolate crunch chocolate that my niece Sylvie had given me from the new Ocean Road Chocolate Factory.  Yum!


Bake for about 15 minutes until the tops lose their shine but dont let the bottoms get too dark.  Let the cookies cool on the tray for about 5 minutes before transferring to a wire cookie rack to cool further.

These beauties are chewy, crunchy, thin and oh so good!
